What is the caffeine?

Caffeine was discovered in coffee in 1820.

It is an alkaloid (C8H10O2N4·H2O) found in coffee bean and tea leaf, cacao and some other plants..

Caffeine is drug that increases the blood pressure, stimulates the central nervous system and stimulates the action of the heart and lungs. Caffeine wakes up creates better mood, even euphoria. But don't drink it too much, because it can cause depression, insomnia, headache, and weakness. It is present in most cola beverages.

Coffee history

The legend says that people had have their first coffee cup in 7 th century, and the others claims it was happened in 9 th , but the story is the same.

Voltaire drinks 50 cups of that "divine drink" as he used to say.

The coffee spread all over the Europe unstoppably.
There is another story that says that Turkish soldiers after defeat left behind bags with coffee. Very soon Wiena had over 100 coffee shops.
In Rome The Pope was worried because of new mania, he thought it was some source of black magic and he was going to forbidden that "devils drink"

but he was offered to taste it before. He was trilled and he proclaimed coffee of "heavenly drink"

Instant coffee came to world in1901 by Japanese chemistry Satori Kato. 5 years later the procedure was enhanced by American chemistry G. Washington, so in First World War coffee become official drink of American soldiers (before that it was rum).

The northern people drinks more coffee then anyone.

By the records from 2001 year, the tradition continues, the Turks drinks rather tea then coffee. The leaders are Finland people with consumption of 11 kg. Per inhabitant in one year. Then go Danish (4,7 kg.), Norway (9,4 kg.) and Swedish (8,5 kg.). Austria just 7,7 kg.and Italy 5,4 kg.

BAHIA from Brazil, it has soft fruity, velvet like taste. It growth in sunny province but with gentle climate.

KITALE growth in Kenya, in higher regions, so it gives strong coffee, some people say that it is the best of all Arabica coffee. For the most of the people it is too strong. Most often it is mixed with other sorts.

ANTIGUA from Guatemala, strong intensive aroma, because coffee plant bushes are exposed to brancing air of Pacific.

POPAYAN from Columbia have well balanced taste and smell, because coffee plant bushes are growing in shadow of banana trees, which keep them safe from strong sunlight in Cordilleras.

Tips on how to make coffee drinks

  To preserve aroma : always keep coffee in nontransparent can, which closes hermetically. In one week you can lose 80% of aroma.
  The taste of coffee drink depends of water you use, hard water can spoil taste.
  It is not good for water to boil for a long time, watch and when come to a boil remove from cooking stove.
  Always cook coffee drink just before serving.
  Never warm up coffee drink.
  Don't cook anything else coffee in coffee pottery.

4 yellow of eggs
6 dag sugar
3/8 l cooked strong coffee
5 dag chocolate coffee filled
0,8 dl wine brandy
1 non-sprayed orange

Pound yellow of an egg with sugar until you get smooth bubbly cream. Mix orange juice with wine brandy. Melt chocolate in coffee and add it to the mixture. Put it to warm glasses and decorate with the orange pill.

Cook coffee, no matter what kind (Turkish coffee, instant coffee, espresso) but depending of what coffee we use we'll get different beverages:

Wienermelanges:

Mixed the same amount milk and coffee together and on top put cream and decorate with powder chocolate.

Brauner:

Black coffee mix with cream.

Verlangerter (long coffee):

Long espresso with cream a side in jar.

Kaiser melange:

1 yellow of an egg well mix with 1 spoon of sugar, then add hot non-sugared coffee and warm bubbly milk.

Irish coffee

In each warm glass put 2 spoons of brown sugar, and 4 spoons of Irish whiskey warmed over candle (like on picture). Add hot coffee (1,5 dl) and one spoon of ground coffee. Mix until sugar is melted, than slowly over spoon add cream, but be careful, don't mix it with low layer of coffee .

Medimurska coffee

2 dl cooked coffee
2 spoons of rum
2 yellow of eggs
2 spoons sugar in powder
whipped cream
chocolate crumbs

Well mix yellow of an eggs with sugar. Cook coffee and spill the rum in. Spill in to glasses. Carefully add yellow of eggs so that layers stays each for himself, also carefully add cream and decorate with chocolate crumbs.

Mexican coffee (for 4-6 persons)

Mexican coffee

5 dag of brown sugar
1,5 dag of small pieces cinnamon quills
5 cloves
pill of ¼ non-sprayed orange
6 dag strong coffee with hard smell largely grounded

Cook 1 liter water with sugar, cinnamon, cloves and orange pill. Let it boil for 5 minutes, than mix in coffee. As it starts to boil remove it from the cooking stove and cover with a cover. After 5 minutes strain the beverage.

Coffee with banana (for 6 persons)

4 yellow of eggs
6 dag sugar
3/8 l cooked strong coffee
5 dag chocolate coffee filled
0,8 dl wine brandy
1 non-sprayed orange

Pound yellow of an egg with sugar until you get smooth bubbly cream. Mix orange juice with wine brandy. Melt chocolate in coffee and add it to the mixture. Put it to warm glasses and decorate with the orange pill.

1,5 dl egg liqueur
1,2 dl banana liqueur
5 dl cooked strong coffee
1 very ripe banana
1,5 dl cream
cocoa for decoration

In blender mix liqueurs, coffee and banana, after mixing you'll have bubbly beverage. Spill in to glasses and decorate with cream and cocoa on top.

Coffee "white charming"

Cossack coffee

1,5 dl strong coffee
2 spoons of rum
2 dl cream
1 vanilla sugar

Pound cream with vanilla sugar. In warm glass spill coffee, add rum and completely cover top with cream.

1,5 dl black wine
1 spoon of sugar
2 spoons of instant coffee (powdered)
2 small pieces cinnamon quills
2 small glasses of vodka

Cook 1,5 dl water with sugar and cinnamon quills. When come to a boil cooked in coffee. When coffee melt add wine and warm it well. Spill it thru strainer in to glasses and add vodka.

Mocca dream

Dutch coffee

1,5 dl strong coffee
1,5 dl milk
1 spoon coffee liqueur
1,5 spoon of instant cocoa
2 dl cream
1 spoon sugar in powder
cocoa in powder

Pound cream with sugar till it starts to concentrate. Cook cocoa with milk and clove; mix in coffee and liqueur, than spill it in glass thru strainer. On top put the cream but don't mix it so that all layers are visible. On top decorate with cocoa.

1,5 dl strong sweet coffee
1,5 dl whole milk
1 spoon instant cocoa
1 clove
1 piece of cinnamon quills and some milled cinnamon
2 spoons cream
½ vanilla sugar

Cook cocoa with 1 piece of cinnamon, clove and milk. Strain and mix in coffee. Spill in to warm cups. Cream with vanilla sugar put on top of beverage. Decorate with milled cinnamon.

Brazilian coffee

Parisian coffee

Cook strong coffee and high-density bitter cocoa.
Mix the same amounts of beverages and while it's
hot spill in to warm cups. Add sugar if you like.

1,5 dl strong coffee
1 spoon coffee liqueur
1 spoon wine brandy
1 dl cream
½ vanilla sugar

Cooked coffee spill into warm cups, add liqueur and wine brandy. Cream and vanilla sugar put on top.
